That Boutique-y Whisky Company Glenallachie Batch 1 51.7%

Btl: 2015/ Tasted: July 2015

The nose is a little hard with a feint sulphur note (probably pushed stills as it isn’t sherry matured). Lightly industrial with hints of herbs, uncooked dough, coffee and some sweet-ish barley attempting to inject some balance.

The palate is a little vague and surprisingly watery given its abv, with hard barley and industrial notes. Again a touch of sweet barley and toffee endeavour to add balance along with a mineral note on the middle.  Very drying, grassy and herbal finish with unfortunately the industrial notes lingering beneath the citrus.

Aromas of edgy toffee and gritty sherrywood tannins along with hints of rye-like herbs. Subtle youthful mashtun notes mingle with dried fruit, liquorice and barley.

The palate is clean and herbal with plenty of sherry wood, dried fruit, toffee and coffee. Quite full and cask orientated. A little masked ion the finished but showing some subtle spices.

Water makes the nose quite fragrant and pushes the sherry back to allow the summer barley notes to come through. Again there is less sherry influence on the palate and more malt and barley. Subtly biscuity with lingering dried fruit and spice.

Lady of the Glen Glenallachie 2005 (13 year old) Marsala Finish 65.1%

A big and biscuity nose with raw Marsala dried fruit, coffee, toffee and hints of green grape and toasted nuts. It has a pleasant floral edge but it’s all about the cask.

The palate opens with a mouthful of dry tannins, winey dried grape, nuts, green olives and honey. Alcoholic and sweet on the middle. Masked, slightly coffee’d and alcoholic finish with hints of sweet wood spice. Like the nose, it’s all cask.

With water the nose isn’t as bicuity or as raw but it hasn’t brought out any spirit character. The palate is sweeter and less tannic. Still very nutty and winey with lingering sweet Marsala finish.

Duncan Taylor Octave Glenallachie 2011 (10 year old) 55.2%

Sherry Octave Finish/ Cask 3033109/ Dist: 2011 Btl: 2021/ Tasted: Nov 2021

The nose displays quite an alcohol prickle and is, surprise, surprise……. Very sherried and a bit soapy! Notes of walnut, prune and treacle along with a soft buttery oak, ginger but no spirit character, well, apart from the slight soapiness that is.

The palate opens with hard, trough spirit, followed by sweet prune, raisin and walnut. Very cardboardy middle with a touch of murky spice and bvanilla. Biscuity/ cardboardy finish with a touch of spice, citrus and vanilla.

Water lessens the sherry and brings out some sweet barley, but overall it’s very simple. The palate isn’t quite a rough, maybe! There are softer oak notes and maybe some honey. Longer and spicier, almost chilli hot spice with a slightly cardboardy finish.

Glenallachie 8 year old Koval Quarter Cask Finish 48%

Tasted Oct 2019

The nose opens with plenty of sweet vanilla and hints of edgy barley. Subtly honeyed with developing, slightly aggressive toasty oak and with time there’s a slight soapiness and an odd chlorinated note.

The palate opens with the subtle honey, barley, apricot, apple and soft vanilla ice-cream. There’s a suggestion of spice which comes through on the finish along with a touch of hard barley and drying but smooth tannins.

Glenallachie 9 year old Rye Wood Finish 48%

The nose is initially slightly raw and cereally, but clean with hints of apricot, white fruit, lemon and lime. polished and natural with the lemon notes coming through strongly. The rye notes are very subtle but the creamy/ vanilla oak adds to the polished feel.

The palate is relatively light in body with noticeable citrus to begin. Hints of barley, honey and cereal on the middle. The oak adds a pleasant polished vanilla sheen to middle although there are some edgier notes. Good length with lingering vanilla oak and a subtle herbal rye note. Slightly creamy white fruit ater-taste.

Tasted Oct 2019

The nose is dense and malty with orange, tangerine, unsweetened pineapple and runny, clear honey. Hints of vanilla and greengage appear along with some slightly gristy notes and hints of dusty wood spice.

The palate opens with the fresh oak and malty. A little tight but juicy and succulent with a touch of edgy spice and barley. Good balance of citrus fruit (orange/ tangerine) and distillery character on the middle. Long and spicy with lingering greengage, green grape, lime, pepper and sweet vanilla.

Water brings a slight perfumed edge t the fruit, but it’s still deep and malty with a little more dusty spice. On the palate is emphasises the tangerine and brings out apricot and granulated sugar notes. In conclusion: It’s a very natural whisky, balancing both the rough and the smooth.

Glenallachie 10 year old Cask Strength Batch 3 58.2%

First & Second Fill Bourbon, Virgin oak, Pedro Ximinez & Oloroso casks

So, I was expecting it to be the same as batch 2, but the dark colour indicated that it wasn’t going to be the same and it wasn’t! Aromas of dense, raisinated sherry fruit and hints of dark chocolate, sweet prune, walnut, date, toasty oak and subtle herbal spices.

The palate is unsurprisingly dense and raisinated with treacle, dark chocolate, milk chocolate, earth and more raw, unpolished sherried fruit. Intense herbal spice finish with malt biscuits, sweet camphor, liquorice, treacle, cigar leaf, heather and slightly bitter spice notes. It’s definitely raw sherry!

Water makes the nose a little softer but it’s very much the same as it is neat. On the palate it has brought out a touch more burnt, biscuity spice and subtle industrial spirit notes. Longer, but damn those bitter spice notes linger. Soft and fluffy it isn’t!

Glenallachie 10 year old Cask Strength Batch 3 58.2%

Re- Tasted: Jun 2020

The nose is quite heavily sherry influenced with treacle, dried rainated fruit and tar. There is some intense American oak character too balance and adds some wheaty/ rye-like notes. Unsurprisingly, given all the oak character there isn’t a whole lot of spirit character going on!

The palate opens with the tarry, treacly sherry along with liquorice, prune and raisin. Like the nose there is some intense American oak character as well and like the nose it has a wheaty/ rye-like middle which is joined by the herbal Oloroso. Intense, alcoholic and herbal oak finish. Not an iota of spirit character here!

Water brings out some slightly floral orange and tangerine. The sherry has become subtly nutty and less PX-like. On the palate it softens and sweetens with more of the treacly sherry showing. Maybe there is a slight edgy mineral note and maybe some edgy barley now, but there is a huge, toasty American oak finish.

Aromatic, sweet, juicy red/black fruit and hints of spice. Like the PX finish bottling the finishing cask is subtle and unobtrusive. Hints of malt biscuits, barley, edgy charred oak follow and with time the aromas become very herbal.

The palate opens with the sweet, juicy, red/ black fruits and hints of syrup and chocolaty spice. Like the nose it is well balanced although the port notes are a tad heavier. Continues sweetly with a touch of tannin. Long, grippy, herbal finish with lingering lightly bitter tannins.

Glenallachie 11 year old Moscatel Wood Finish 48%

The nose is rather reserved but displays the classic burnt biscuit and dried grapey fruit of the Moscatel cask. Hints of herbal spirit and edgy vanilla’d tannins appear along with some toasty cereal notes. Late lemon but its overwhelmingly cask orientated.

The palate opens with the burnt biscuits, toasty oak and grapey dried fruit. There are some some subtle industrial notes on the middle along with malt, spice and citrus. Long, edgy, earthy and tannic with alcohol enhanced bitter wood spice, but it’s balanced by the grapey/ sweet dried fruit and sweet vanilla.

Glenallachie 11 year old Port Wood Finish 48%

Tasted: Jun 2020

A soft, yet edgy nose of dried red fruits and subtly sweet spice. Hints of barley and spirit character mingle with some raspberry jam notes. Characterful but balanced with a late herbal rye-like note.

The palate open with the jammy red fruit but the edgy spirit character balances. Hints of erth, herbs and spice on the middle. Long and juicy finish with the battle between the spirit and the cask going all the way. Entertaining and fun even if the after-taste is a little on the raw side.

First Fill Bourbon, Virgin oak, Oloroso and Pedro Ximinez casks

As dense and malty on the nose as the 10 year old cask strength but with a noticeable sherry influence. Soft dried fruit, prune, walnut and raisins are balanced by a lithe, sharp greengage and lime note which cuts through the sherry. Grippy virgin American oak tannins and spicy sherry tannins are smoothed by a touch of treacle.

The palate opens with barley and toffee, followed by chunky malt and soft dried fruit. Lightly coffee’d middle with a subtle sherrywood spice and dark chocolate note. Long and grapey as the PX cask character appears. Lingering walnut, raisin and a little bitter spice. Good progression.

Glenallachie 12 year old Pedro Ximinez Wood Finish 48%

10 years in American oak, 2 years finishing in Pedro Ximinez casks

The nose is actually quite subtle on the PX cask notes and shows a good barley intensity along with apricot and vanilla. Subtle spicy dried fruit in the background with hints of dark syrup, treacle, greengage, dusty chocolaty spice, tobacco and wood smoke.

The palate opens with more of the PX sherry but it’s still reasonably balanced. Barley, apricot and honey mingle with soft dried fruit, chocolaty tannin, cinnamon, ginger. Subtly toffee’d finish with a big hit of palate cleansing lime and tart greengage.

Plenty of sweet, treacly, herbal sherry, raisnated fruit, burnt wood, and dark chocolate. There’s some very subtle citrus notes beneath but the sherry rules….

The palate shows more edgy Oloroso herbal character with hints of malt, treacle and citrus. Gritty and quite tannic on the middle with bitter dark chocolate, but oodles of soft raisinated fruit. Long and silky with dark chocolate, orange and sweet ginger in the finish.

There’s not much sherry influence on the nose, which isn’t a surprise given that it was aged in an ex-Bourbon cask (contrary to what the sample label said!) . In fact it is very estery with pineapple, peach, apricot and wonderfully luscious, mature honey. Hints of straw-like barley follow and with time it does develop a slight edginess, but also some floral honey as well.

The palate is maltier and darker with thick slabs of toffee-malt, barley and honey. Lightly herbal (finally a little sherry influence?) and citric with hints of oak vanilla. Slightly masked finish but the juicy fruit returns along with the mouth-watering citrus.

A drop of water makes the nose classically Spey – crisp and grassy. The palate displays more toffee’d oak and less of the citrus, but either neat or diluted it is very pleasant.

Quite dense and honeyed aromas. Chunky vanilla and developing herbal notes mingle with lovely fragrant honey and barley. With time it becomes quite fresh and citric.

The palate opens with toasted toffee and oily barley. The oak has muted the palate a bit. A little short, but pleasantly spicy finish with a lightly tannic after-taste.

Fresh, soft aromas of white stone fruit, peach, apricot along with a touch of Satsuma and straw.

The palate opens quite sweet with some sugar coated citrus and white fruit along with a touch of vanilla. Relatively piquant middle leads to a slightly grassy, light honey and rose petal marc finish.

The nose is quite subtle with crunchy, sugar coated nectarine, orange and barley. Hints of fragrant honey follow. The aromas freshen when the lime notes appear. With time the charred oak comes through along with hints of liquorice and spice.

The palate has a grater intensity of sugar coated nectarine, orange and barley, along with straw and an underlying, mature fruit character. Gently mineral on the middle with a touch of liquorice root and malt. Medium length and a little dry, austere and grainy on the finish but the liquorice note lingers as do the sugars. I have to say for a Glenallachie it’s pretty impressive.

Dusty barley and pollen heavy flowers to begin with on the nose, followed by hints of tropical apricot and pineapple. With time some brittle honey and hard, slightly industrial barley appears but the luscious fruit and vanilla oak soften.

The palate opens with subtly sweet barley, apricot and drying, slightly coffee’d tannins. Hints of baked apple and wood spice on the middle. Pleasantly mature with a long, dusty and peppery spice and cardamom finish with a little bittering oak.

A lithe and lemony nose. Fragrant with white rose, hyacinth, white pper and vanilla. With time some harder barley notes appear along with apricot and toffee.

The palate is fuller, more barley focused with honey, white fruit, lemon and vanilla. It certainly doesn’t feel its age. A subtle harder barley note comes through on the middle along with a touch of spice. Long, lemony, white rose finish with lingering spice and white chocolate.

Lightly earthy sherry aromas with hard barley and industrial notes. Slightly herbal and a little rye-like with developing treacly sherry which eventually covers the industrial character.

Nutty sherried dried fruit, barley and again some industrial notes on the palate. Hard and a little bitter with some treacle notes attempting to balance. Short, hot and slightly spicy finish.

An oily, youthful, pungent nose with hints of pepper, chicory and fennel. A little ‘off the still’ aroma with fragrant barley and dense, lumpen toffee.

The palate opens with plenty of oily toffee/ caramel oak. Hints of Turkish delight and sweet barley. A crisp, cleansing, citrus note comes through to balance the oak. The oak does bitter the finish a little but it’s pleasant enough.

A nose of toasted, slightly singed toffee and lightly herbal grain spirit-like notes. A touch of hard barley appears, as does a little honey which attempts to inject some balancing sweetness.

Lightly burnt toffee and hard barley to begin with on the palate, followed by hard spices and mineral notes. The finish is a tad austere with some lingering rye-like herbs and a light earthy/ coffee’d after-taste.

Earthy and slightly industrial aromas with a touch of coffee’d sherry. Slightly balsamic and murky with a pervasive hardness!

The palate is just like the nose – hard, industrial and coffee’d with hints of sherry spice. There is some slightly sweet barley and white fruit beneath but the alcohol masks the finish.

With water it becomes a little cleaner with a touch more barley and white fruit on the nose. However the hard, industrial notes are still noticeable. Likewise the palate. Slightly malty and treacly finish now.

Dewar Rattray ‘Individual Cask Bottling’ Glenallachie 1995 (17 year old) 57.5%

Bourbon Hogshead 93/ Dist: Dec 1995 Btl: Apr 2013/ Tasted: Apr 2013

Waxy and buttery aromas with huge globs of barley and malt. A subtle nose this isn’t! Lightly citrus with a touch of grassy white fruit, damp straw, earth, petrol and a developing balsamic note.

The palate is buttery and slightly caramelised. The spirit isn’t really imparting much apart from a light grass note. Once the alcohol clears some sweet barley, coffee and sweet, stewed fruit becomes apparent along with a touch of spice and balsamic. Very back end loaded.

Water emphasises the crisp, grassy citrus. Less waxy now with a light honeycomb note. Still quite malty with more f the baked fruit evident. The palate is slightly watery – sugar water. The oak has definitely gone awol and thus the spirit shows more of the dried grass and straw notes. Some sweet barley creeps in as does a little spice on the finish
