Refill Sherry Cask 2451/ Dist Aug 1980 Btl: June 2005/ Tasted: Nov 2005

Clean, pronounced aromas of beeswax, floor polish, light sherry wood spices, orange/ peach. Lovely sweetness with vanilla-toffee and liquid honey notes. Dry on the palate with initially a lot of dusty wood tannins. However it mellows into a cognac-esque dried fruit, orange and honey middle. Very long and elegant spice laden finish.

Water brings out the spirits fruitiness, slightly subduing it’s mature characteristics. On the palate it brings out some luscious fresh honeycomb, whilst consigning the wood spices to the background, yet the eventually return in all their glory on the finish.
