Bourbon Cask 5632/ Dist; 1979 Btl: 2005/ Tasted: Oct 2006

Clean, soft aromas of deliciously creamy oak and mature oily fruit. The oak is so soft and sweet its just lovely. On the palate the oak is not so dominating allowing the quite salty, soft, mature white fruit to come through. Delicate and long with vanilla oil and Alsace-esque slightly spiced and smoky white pear and peach.

Cask 5638/ Dist: 1979 Btl 2007/ Tasted: July 2007

An intense gin like nose with no shortage of botanical notes. A bit on the spirity side but with a pleasant depth of orange, vanilla, buttered toffee popcorn and grass. The palate is clean and full of tart orange and lemon fruit. Slightly winey with a fleeting vanilla note before the alcohol sears the palate. God that’s almost painful! 

Water mutes the nose and emphasises the oak as well as muting the palate. However it does sweeten it a bit and in a way it’s become quite pleasant to drink before finally finishing with a Sauvignon like note. 

Duncan Taylor Rarest of the Rare Pittyvaich 1979 (38 year old) 51.4%

Cask 5639/ Dist: 1979 Btl 2007/ Tasted: July 2007

Deeper and a lot more oilier than the sample of cask 5638. It has oodles of honied orange fruit, a touch of grass and a better balance of vanilla.

Delightfully awesome with hints of soft, ground, sweet spices. A quiet oily entry. Soft, smooth with gloriously honeyed fruits and a winey sauvignon blanc-esque middle. Clean, hard and mineral finish with the sauvignon character persistent along with a touch of botanicals. A drop of water really doesn’t bring any further revelation so I would drink it neat.

Bourbon Cask 8423/ Dist: June 1976 Btl: Feb 2001/ Tasted: June 2004

Sweet, fruity, estery nose, with the faintest traces of aniseed and pepper. Medium bodied, quite sweet tasting with oodles of delicious creamy oak flavours. Smooth and well balanced with a fresh, dry, spicy finish.
