Nose: Quite malty with confected, boiled sweet sherry and coffee. Youthful, oily, rose petal marc-like notes mingle with charred wood and clean sherry.
Palate: Soft, full and malty with ark treacle and an almost ark rye-like note. Quite balanced with the sherry in the background.
Finish: Ok length, a little ear and youthful with the rose petal and treacle notes lingering.
Conclusion: The nose is pretty much all cask but the palate has a better balance.

Nose: Burnt, sulphurous and industrial with burnt ginger spices.
Palate: Oily, cardboardy and again industrial.
Finish: Short, spirity and raw with a damp ashy finish.
Conclusion: oooh my favourite!!!

Nose: Burnt earth, liquorice, burnt caramel and herbal rye-like notes. Underneath some sweet honey can be detected but the aromas become increasingly cardboard and industrial.
Palate: Burnt caramel, earth and cardboard! Rough!
Finish: Industrial and acerbic.
Conclusion: Lacking any charm whatsoever.

An edgy and herbal nose. Not as nutty as one would expect from this sherry cask. Reasonably balanced with hints of barley and winey dried fruit.
The palate is dry and austere. Quite earthy and slight industrial. I’m guessing that the finishing cask wasn’t 100% clean? Lightly grapey and nutty finish, but the jury is still out on this one!

Nose: Quite Industrial with burnt earth, toffee, malt and coffee. With time a touch of barley and creamy American oak appears.
Palate: Hard and industrial with burnt earth, caramel and cardboardy notes.
Finish: Hard, alcoholic and mouth-watering with brittle barley notes.
Conclusion: Lacking any sweetness to balance its industrial character.

Slightly hard, rough and industrial. Syrupy, peppery fruit mingles with hints of coffee and edgy spirit notes. Even though it’s a bit rough and ready, the balance itself isn’t too bad.
The palate is hard but gently juicy with syrup coated black fruit. The alcohol is quite noticeable and the finish is slightly green and stalky, which makes it a tad dry, although the dried fruit and pepper notes linger.

Nose: Quite earthy to begin with, followed by hard barley. The aromas become quite peppery and sub-industrial in character with hints of boiled sweets, violets and a touch of bitter caramel/ coffee.
Palate: Opens with hard barley and sub-industrial notes. Lightly oiled with a touch of apricot but those burnt caramel notes are building.
Finish: Quite bitter and hot with hints of herbal rye-like notes along with a little honey which attempts to balance.
Conclusion: Quite hard work!

The nose is ever so slightly edgy, but pleasant, with coffee, treacle, dark honey and dried fruit. There’s a little more citric spirit character showing, which balances the PX and allows a touch of nutty barley to emerge.
The palate is slightly hard but the treacle offsets. Quite full with a pleasant citrus middle. Long, slightly drying but the sherry notes linger. All in all, it’s quite well balanced.

Nose: Young and oily with hints of burnt toffee and fragrant barley. It becomes very sweet and creamy as the oak arrives. Quite herbal too.
Palate: Full of toffee. The oak is definitely in control. Maybe a hint of barley, herbs and citrus appear but it’s hard to get past the oak.
Finish: Finally the citrus and alcohol come through but the sweet oak hangs in there.
Conclusion: I’m sure there is some spirit underneath all that oak!
Slyrs Edition No2 Sauternes Finished 46%

An oily nose with a touch of honey and slightly toasted/ burnt cxaramel. Quite young and spirity with some ‘off the still’ cereal. Lightly herbal with a developing Sauternes sweetness.
The palate is heavy on the American oak and the honeyed Sauternes notes. There’s not much in the way of balancing citrus or spirit notes. Again it’s a little on the short side, but overall it’s a solid whisky.

Nose: A little soapy and herbal with honey, barley and hints of burn coffee grains. Slightly industrial with a developing perfumed note which adds to the oddness of the nose.
Palate: Full and toffee’d with hints of burnt toffee/ coffee and a light sulphur blemish. Actually the blemish becomes quite intrusive and bitter.
Finish: Bitter!
Conclusion: An odd but not unpleasant nose, but a sulphur ruined palate.

The nose opens with some obvious, herbal Oloroso. Grapey, winey and a little hard with burnt earth and a slight off note in the background.
The palate is hard, grapey and slightly blemished. Drying, green/ bitter tannins with a definite industrial and sulphur tainted finish.
Slyrs 2011 (3 year old) Bavarian Single Malt 43%
Dist: 2011 Btl: 2014
Aged in new 225ltr oak casks
Nose: Very toffee’d and very sweet with hints of barley. However the Bourbony oak dominates. With time some sweet honey and sweet rum like dried fruit appears.
Palate: Opens with a little more barley along with a touch of crisp citrus, which keeps the oak at bay to a certain extent but the toffee comes through on the middle.
Finish: Long and herbal with a freshening citrus finish.
Conclusion: The palate displays a better balance than the nose but it’s still too oaky. Rum finished perhaps?

The nose is quite chunky and oaky with plenty of vanilla. Lightly estery, youthful fruit beneath with citrus and rye-like herbs. The oak settles with time and allows a touch of honey and barley to emerge.
The palate is young, taught and edgy. Quite barley’d with a ci9tric and alcoholic middle, which stops the oak getting going. Hints of honey and dried fruit comes though on the finish, which is a little short.

Tasted: Feb 2017
Nose: Crisp and briny but oily and lightly fishy. There are some feinty notes in amongst the peat and fish oils.
Palate: Feinty and hard. Pungent and oily with peat, turpentine and old wood notes.
Finish: Short, briny and spicy.
Conclusion: Paint stripper!
Slyrs Bavarian Single Malt Marsala Finish 46%
Tasted: Feb 2017
Nose: Astringent, burnt heather and rye-like notes. Young, but interesting, in a masochistic kind of way! Thankfully there is a little estery fruit and malt.
Palate: Softer and a little simpler. Hints of malt, rye-like notes and coffee’d spice. A little unfocused and musty.
Finish: Dry, spicy and woody. Again a little must with some rose petal marc notes.
Conclusion: I actually quite liked the nose, but all told it’s a pretty poor malt.
